What is Gum Arabic?
Gum Arabic, also known as Gum Acacia, is the air-hardened gummy exudate flowing naturally or obtained by tapping from the trunk and branches of Acacia senegal, Acacia seyal and other species of Acacia of African origin.
Chemistry
Non-starch polysaccharides combined with a small protein fraction is what Gum Arabic is made up of. This unique combination gives Gum Arabic properties which allow it to be used for a remarkably wide range of applications.
History
Gum Arabic use goes back into the mists of time. The ancient Egyptians used it for medicinal reasons and as a glue. Artists and confectioners have used Gum Arabic for centuries and more recently Gum Arabic has become a key additive and ingredient in many food and beverage products.
